Ingredients
For the Salad
- 1 large bunch kale, stems removed and leaves finely chopped
- 1 cup croutons
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil (for massaging the kale)
For the Caesar Dressing
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 1–2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 large garlic clove, minced
- ¼ cup grated Parmesan
- Salt and pepper to taste
- Optional: 1–2 tsp anchovy paste for classic flavor
Directions
1. Prepare the Kale
- Remove tough stems and finely chop kale leaves.
- Place in a large bowl and drizzle with olive oil.
- Massage kale with your hands for 1–2 minutes until softened and darker in color.
2. Make the Dressing
- In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, Parmesan, salt, and pepper.
- Taste and adjust—add more lemon for acidity, Parmesan for richness, or pepper for spice.
3. Assemble the Salad
- Pour dressing over the massaged kale.
- Toss until all leaves are well coated.
- Add grated Parmesan and croutons.
- Toss lightly to combine.
4. Serve
- Serve immediately for crunchy croutons, or chill 10 minutes to let flavors develop.
- Enjoy as a main dish or a side!
